As many will know, Pinot Gris is more a red grape than a traditional green-skinned white grape. When left to ferment on it's pink-ish skins, Pinot Gris can pick up this ruddy colour, a truckload of awesome floral aromatics, and a bunch more palate weight.
It makes a great base for a natural sparkling. It's juicy, lightly spicy and as refreshing as a cool swim on a hot day.
