Our white wines are all made from fruit from the cooler climate of
the beautiful Adelaide Hills. Fruit for this Sauvignon Blanc comes
from a single block of vines in the lee of Mount Torrens in the central
Hills. The north-south rows crest a small rise and dip through a gentle
gully. Moderate crop levels and even ripening ensure great intensity
of fruit characters - the perfect counterpoint to the naturally
balanced acidity of classic Adelaide Hills Sauvignon Blanc.
Good Sauvignon Blanc does not need extensive winemaking. If the
grapes are of high quality, we believe the wine will deliver with its
intensity and the purity of its natural, cool-climate acidity. This wine
is made with the simple process of machine harvesting, crushing,
pressing, settling, racking and cooling. Once stabilised, it is bottled
young to retain its freshness. There are no barrels used, no skincontact, no winemaking embellishment - just the clean flavours of
lovely, crisp fruit.
Vintage 2021 was dry, with mild to warm days and cool nights
allowing all the fruit to ripen beautifully without any pressures from
